De très vieilles vignes en parfait état sanitaire, une météo optimale et un travail complice entre le vigneron et le tonnelier pour le choix des chênes et du brûlage, voilà les trois conditions pour réussir cette cuvée d’exception, produite uniquement dans les meilleurs millésimes. Issue d’un terroir de marnes Kimméridgiennes, la ‘Tradition Cullus’, hommage à l’arrière grand-père de Michelle, est vinifiée en demi-muids de chêne, dont un tiers neuf.
Cette cuvée d’une extraordinaire richesse est pleine et harmonieuse, elle accompagne magnifiquement une cuisine riche et travaillée, voire un accord sucré-salé, ou une cuisine épicée. Foie gras poêlé aux reinettes, Magret de canard aux poires caramélisées dans sa sauce miel et balsamique, Gambas à l’orange, Saint Jacques sauce foie gras seront d’excellentes complices.

Oh la la! Ik drink graag rode wijn. Als Nederland echter wordt omarmt door zomerse temperaturen vul ik maar al te graag het koelvak met mooie witte wijnen. Deze wijn was de mooie begeleiding van een salade nicoise. En wat voor eentje! Knisperig fris, uitdagend geurend, bomvol fruit en een fijne hint naar wat droog. Botermals in combinatie met de vettige vinaigrette en vis! Jummie!

Ein Sauvignon blanc à ma façon: Dezente Koriandernote (mehr geht für mich nicht ist einfach nicht mein Ding), Bergamotte, Zwiebelchutney, eine Spur weisser Balsamico, Zitronengras. Füllig und dicht am Gaumen, erfrischende Säure gefolgt von mineralischen Noten, mineralisch grasig im Abgang.
